Cristom - Chardonnay - Eola-Amity Hills durango Tasting Notes: Master Distiller RicardoOverview: The Eola Amity Hills Chardonnay is a blend of benchmark vineyards for the AVA with a focus on Cristom Estate fruit. The fruit comes predominately from the Louise and Paul Gerrie vineyards, as well as select neighboring sites. The grapes are 100% hand harvested and undergo 90% native yeast fermentation before whole cluster press. The wine then sees full malolactic fermentation in barrel before aging for 12 months, in 31% new French oak.
